As we say goodbye to the 2014 Epcot International Food & Wine Festival, here’s a little something amazing to keep you going until next year!

We all have our favorites in life. Favorites places, favorite people and favorite restaurants.
Even more importantly, favorite Disney restaurants. Walt Disney World restaurants to be specific. My family has our favorite little hidden gem that we must go to every single time we visit Disney World. Last year we decided to try all new restaurants, but while walking past this restaurant I just couldn’t not go…so I cancelled one of our reservations and made a reservation for our favorite?
Are you just dying to know which restaurant? Pins and needles? A quaint bistro hidden away in the France Pavilion of World Showcase (Epcot) called Les Chefs de France. It even sounds nice to say out loud. Les Chefs de France.
I just adore the atmosphere. I would be happy coming to this restaurant every evening. When we arrive there usually is a little wait, even with a reservation. While we wait for our table to become available we usually sit along the fountain…which is just beautiful all lit in the evening. Fond memories!
I love that I have dined in all different areas of the restaurant. I must say my favorite spot is in the sun-room all surrounded with windows. You can really appreciate the beauty of the location. Here we have been able to take it all in.
This past visit was extra special because my daughter Meghan has been taking French in school for the last two years. She was excited to tell our French garçon she could speak a bit of French!
I love the decor inside this restaurant, the dark woods, the tin ceilings, and the large globe lighting. The tables can be a bit tight together but it’s never been an issue. The noise level isn’t terribly bad as we have not had any issue with talking with those at our table.
So how about some French food? Once you order your food selections you will be presented with a lovely warm baguette (wrapped in paper) with butter. Very delicious…and I’m a big fan of warm bread, especially when it is this good.
I have always ordered the roasted half chicken with rissole potatoes. I thought it was time to experiment and try something new. From what I have been reading the steak is divine. I ordered the Grilled tenderloin of beef with green peppercorn sauce, original potato grain of Savoy and green beans. Yes, divine indeed. Next time I will have a very difficult time choosing between the two because I really feel they are equally as good. The steak was very tender (I hate a tough steak!) and the sauce was just perfect with the steak! The potatoes had a strong (french) cheese that was a bit heavy for me so I just ate a bit and shared with the rest of my family. They did love it as well
Dessert, I cannot break away from the usual. I love good chocolate mousse. Add wtih chocolate curls on top…and a nice light pound cake… pure heaven. You might want to pass on dessert and after your dinner at Les Chef de France, walk over to Les Halles Boulangerie & Pâtisserie.

Maleficent is coming! It’s time to brush up on the traditional lore of the Disney classic, Sleeping Beauty, before you see her side of the story.
As guests arrive they pick a side. Would they like a Princess Aurora crown or Maleficent horns? I searched for templates online, and supplied foam sheets, bling and glitterglue. Headwear is formed over cheap headbands, super glued on then decorated.
Next up, guests will have their knowledge tested before the movie starts by filling out their quiz*. If you trust them, they can score their own during the movie, or you can go old school and have the quizzes scored by another guest. Be sure and have a Sleeping Beauty themed gift for the winner..a Maleficent soundtrack, Sleeping Beauty DVD or Aurora doll are some ideas.
Time to choose again. Pink or Blue? Clear soda (or for an adult evening a clear sparkling wine would be fun) is provided along with pink and blue colored drink powder crystals.
For a snack, how about Good Fairies Petit Fours? Made from pound cake cubes and decorated to honor Flora, Fauna and Merryweather, no choices are necessary as each guest can have all three.
Send guests home with their very own “Once Upon a Dream” journal, easily made with miniature composition books covered with paper and decorated.

Chocolate Mango Rum Cake from Atlantis Resort, Bahamas
Combine all wet ingredients with a whisk. Add dry ingredients, mixing until smooth and lump free. Pour into individual bundt molds or cupcake tins until 3/4th full.
While cakes are warm use 1/2 of the syrup to pour over the cakes. Cool in mold.
To serve, cut mango in small cubes and put on cake. Top with more sauce and garnish with fresh mint.
This is a delicious tropical treat.

On some Royal Caribbean ships you will find the enticing Cupcake Cupboard. A favorite is the Red Velvet Cupcake featured here:
Preheat oven to 350.
Line muffin cups with paper liners.
Combine flour, cocoa powder, baking powder, baking soda and salt in a medium sized bowl and mix.
In a small bowl, combine buttermilk, vegetable oil, red gel paste food coloring and vanilla extract and mix well.
In a medium bowl, with an electric mixer at medium speed, beat butter and sugar for about 4 minutes until creamy and light in color. Incorporate eggs, one at a time, beating well. Reduce speed to low and slowly incorporate flour mixture and buttermilk mixture. Beat for 2 minutes or until well mixed.
Fill liners 2/3 full. Bake 18-20 minutes or until a toothpick inserted in the center of the cupcakes comes out clean. Remove cupcakes from the baking pan and let cool on wire rack.
Ice with cream cheese icing and decorate.
